Blueberry Lemon Pastry

These Blueberry Lemon Pastries makes a perfectly portioned breakfast, snack or dessert. They are tart with a hint of sweetness. Each pastry is only 4 WW smart-points and 124 calories.

 

To make this Blueberry Lemon Pastry recipe you only need a couple of ingredients; puff pastry, blueberries, confectioners sugar, fresh lemon, egg, salt and water. You can also use raspberries, strawberries, blackberries or a combo of all!

This also makes a wonderful Valentine’s day treat or breakfast. All you need is a heart cutter. The one used in this recipe is a 3 inch cutter that I got from Walmart.

WW smart-points

To make this smart-point and calorie friendly I used 2 3/8 tbsp. confectioners sugar. Anything more that will increase the recipe to 5 smart-points. In addition, the puff pastry needs to roll out a bit to make sure you get 9 servings (approximately 10 x 10). The puff pastry scraps are counted in the smart-points, you can bake them as is and split into 9 then dust with no more than 3/4 tsp (0 smart-points) confectioners sugar. Any glaze or toppings are not counted but can be added for additional points. My favorites are whipped cream, cool whip, dusting of confectioners sugar, glaze made with lemon juice and confectioners sugar

 

Ingredients

  • 1 puff pastry sheet, thawed in the refrigerator
  • 1 cup fresh blueberries, washed
  • 2 tbsp. confectioners sugar (you can use up to 2 3/8 tbsp.)
  • 1 tsp lemon juice
  • zest of half a lemon
  • pinch of salt
  • egg + 1 tbsp. water for egg wash
  • non stick spray

 

Directions

In a small bowl add blueberries, sugar, lemon juice, lemon zest and salt. Mix to combine. Spray a large cookie sheet pan and place parchment paper on it. Set aside.
Let sit while preparing puff pastry.
Set oven to pre heat on 375 degrees. Make sure puff pastry is thawed but still very cold. Roll out on a floured surface to 10 x 10
Using your cookie cutter, cut out 9 shapes and place on prepared cookie sheet leaving some room in between each pastry.
Using a knife make dents where the blueberry will be placed, this will help them to not puff up.
Place blueberries within the outline, no juices. I like using my hands for this part.
Make egg wash and brush the edges.
Bake for 15 minutes or until edges are golden brown. Let cool for about 10 minutes before serving.

  • Step 2 Line large baking sheet with parchment paper and set oven to 375 degrees.
  • Step 3 On a floured surface roll out puff pastry sheet to about 10 x 10.
  • Step 4 Using your cookie cutter cut out 9 shapes and place on baking sheet
  • Step 5 Next, make an outline or dent inside pastry using a knife. Refer to picture.
  • Step 6 Place blueberries within outline, no juices.
  • Step 7 Make egg wash and brush sides of pastry.
  • Step 8 Bake for 15 minutes or until edges are golden brown.
  • Step 9 Cool for 10 minutes before serving.
