Roasted Asparagus with Gorgonzola and Almonds

This EASY Roasted Asparagus with Gorgonzola and Almonds will make a delicious addition to any meal. I personally like serving these on special occasions. Either way, you’re going to enjoy them!

To make this Roasted Asparagus with Gorgonzola and Almonds recipe, you will need three main ingredients:

Asparagus– look for bright green, firm asparagus. Not melty/mushy. Around this time they start to be in season (February to June) so you’ll find plenty of good ones at the market.

Gorgonzola Cheese- this type of cheese adds a rich, creamy and salty taste to this dish. Find it in the cheese section of your grocery store. Blue cheese can also be used as a substitute.

Slivered Almonds– these are used to top of this dish to add a crunchy texture.

Notes:

To avoid soggy asparagus, these asparagus needs only about 10-13 minutes of cooking time. Try not to leave them longer than 13 minutes. You can also make them in the air fryer using an air fryer tray to hold the cheese and almonds. This can even work using the stove-top method.

You can top them off with even more cheese once done cooking just be sure to count the points and Cals! I recommend serving them right after they cool for about five minutes.

I split this recipe into four servings. I got about 6 spears in a serving. Once done you evenly divide them to make four equal servings. Always be sure to recalculate smart-points and calories if substituting or using a different amount than the what the recipe calls for.

 

Ingredients

  • Asparagus
  • Canola oil
  • Salt
  • Black pepper
  • Garlic powder
  • Gorgonzola Cheese
  • Slivered Almonds

 

Directions:

To start: preheat oven on 400 degrees.

Wash and dry asparagus.

Snap asparagus by bending it until it breaks off. Discard the bottom parts and place on a large sheet pan.
Add oil and toss. Add salt, pepper and garlic powder, toss evenly. Roast for 8 minutes.
Remove from oven after 8 minutes and sprinkle on cheese then almonds. Place back in the oven and roast for another 5 minutes. If desired you can add more cheese on top (count the points and cals). Let cool for 5 minutes and serve.

  • 1 lb. asparagus- washed and trimmed
  • 1 tsp canola or olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp garlic powder
  • 1.5 oz. gorgonzola cheese
  • 1.5 tbsp. slivered almonds
Directions
  • Step 1 Preheat oven on 400 degrees Fahrenheit.
  • Step 2 Wash, dry, and trimmed ends of asparagus and place on a large baking sheet.
  • Step 3 Drizzle with oil and toss.
  • Step 4 Add salt, pepper and garlic powder. Toss to coat evenly.
  • Step 5 Roast for 8 minutes then remove from oven add cheese and almonds on top.
  • Step 6 Roast for another 5 minutes.
  • Step 7 Cool for 5 minutes then serve.
  • Step 8 Enjoy!
