Spinach and Feta Wonton Cups

These easy Spinach and Feta Wonton Cups takes about 20 minutes from start to finish and are perfectly portioned. Great for on the go breakfast and can also be made ahead of time and warmed up when ready to eat. Weigh out your avocado and cheese if you can on a food scale rather than using a measuring cup, you get more “bang for your buck” that way. You can add more feta and use toppings or mix ins such as bacon, but remember to count additional calories and points. Enjoy!

Ingredients

  • 24 wonton wrappers
  • 5 medium eggs
  • 1/4 cup whole milk
  • baby spinach leaves (can use frozen as well)
  • 28 g or 1/4 cup feta cheese
  • 3 oz avocado, chopped
  • 1/4 tsp salt, or more
  • 1/4 tsp black pepper
  • 1 scallion, chopped
  • Pam spray
  • red pepper flakes (optional)
  • center cut bacon (optional
  • sour cream or Greek yogurt (optional)

Directions

  1. Heat oven to 350 degrees
  2. Spray muffin tin with Pam spray and place 2 wonton wrappers facing opposite directions in each muffin thin, press down and repeat with remaining wrappers

3. Add spinach leaves, about 3 per muffin tin or about a tablespoon frozen spinach that is thawed and squeezed to drain water.

4. In a measuring jug or bowl, add eggs, milk, salt, black pepper, tops of scallion, pepper flakes and mix well. Pour egg mixture as evenly as you can over spinach. I press down the spinach so the egg mixture can get in between the leaves. Top with feta cheese

5. Bake for 15 minutes or until eggs are set and wrappers are light brown. At this time you can also put bacon to cook in the oven if using.

6. Once done, cool for 5 minutes and top evenly with avocado and the greens of scallion. Optional toppings (not included in calories or points) are bacon, sour cream, and more feta. Serve warm.
