Tips on making this Savory Scones with Bacon, Feta, and Green Onion recipe
Measure flour by spooning flour into a measuring cup then level with the back of a knife. Make sure butter and milk are very cold. I place the butter in the freezer about 15 minutes before use. The cold butter can be either grated using the fine side of a box grater or cut in using a pastry cutter. I use the tips of my fingers to rub the butter into the flour. For best results use baking powder that is fresh and hasn’t been opened for over six months. This dough does not need to be kneaded, it just needs to come together to bind all the ingredients. Using a fork to stir helps with this step. Finally, once the dough is formed and cut, it needs to refrigerate for about fifteen minutes before baking. These scones taste best while warm. It can be stored in an air-tight container for up to 2 days and refrigerated for up to 5.

- Reduced-Fat crumbled feta cheese
- Scallion/Green Onion
- Almond Milk
- Egg- this is optional, I did not use this but can be used as an egg wash for a more brown top. Will affect smart-points.
Directions

- Grate cold butter into flour, use fingertips to incorporate or rub butter and flour, this may take 1-2 minutes.
- Add in milk and mix lightly with a fork, before fully binding flour and milk, add in chopped bacon, crumbled feta, and sliced scallions, and continue to bring together.
- Pour dough onto a lightly floured surface and form into a disk. Avoid overworking.
- Flatten to about 8 inches. Cut into eighths and place on a large sheet pan lined with parchment paper.
- Refrigerate for 15 minutes or place in the freezer for 10 minutes. Set oven to 425 degrees Fahrenheit.
- Brush scones with milk and bake for 20 minutes. Cool for 5 minutes and enjoy warm!
