Breakfast Poppers with Ground Turkey,  Cheese, and Veggies

These healthy and tasty breakfast poppers are made using ground turkey breast, veggies, eggs, and pepper jack cheese. They can be air-fried or oven-baked and are low in smart-points, calories, and carbs.

What are Breakfast Poppers?

Breakfast poppers are like meatballs with a couple of switch-ups in ingredients. Adding in eggs and oatmeal contributes to this being a great breakfast add-on. Any veggies can be used to bulk up and for flavor. They are made into 1 oz. balls and then either air-fried or oven-baked resulting in a delicious breakfast popper. Pair them with pancakes, waffles, toast, potatoes, or have them by themselves. These freeze well and can be reheated in the air-fryer or microwave easily.

 

Air Frying

To air-fry these poppers I preheated the air fryer to 400 degrees Fahrenheit, spray the tray with non-stick spray then add in as many poppers as you can without touching. Mine held 8 poppers. Spray the tops with non-stick spray and air fry for 5 mins, turn and air fry for another 1 minutes 30 seconds. Your meat thermometer should read 165 degrees. Done! I love the crispiness I get from using this method.

Air-fried method

Oven Baked

To oven bake, set oven on 425 degrees Fahrenheit. Place poppers on 2 large baking sheet lined with parchment paper. Bake for about 14 minutes. A meat thermometer should read 165 degrees. In this method you wont get the crispiness and brownness as you will in the air fryer but it taste just as good. Over cooking will result in a dry popper.

Oven-baked method

Ingredients

  • Ground turkey breast
  • Eggs
  • Freshly grated pepper jack cheese
  • Red bell pepper
  • Mushrooms- I used baby bella
  • White onion
  • Fresh parsley
  • Dry oatmeal
  • Salt
  • Ground black pepper
  • Garlic powder
  • Non-stick spray

Method

  1. If making in the oven preheat on 425 degrees F. Scramble eggs using the non-stick spray, break up eggs into small pieces. Set aside to cool.
  2. Place ground turkey breast, scrambled eggs, chopped bell pepper, mushrooms, parsley, onion, dry oatmeal, salt, pepper, and, garlic powder into a large bowl. Combine all ingredients. Clean hands work best!
  3. Using a small cookie scoop, scoop meat mixture. With damp hands roll into a ball. Each ball should weigh about 1 oz. You can also measure by using 1.75 tbsp.
  4. To air-fry- preheat air fryer to 400 degrees for 2 minutes. Spray non-stick spray on the tray of air-fryer, add in poppers and spray tops. Cook for 5 minutes, flip and cook for another 1 minute and 30 seconds or until a meat thermometer reads 165 degrees.
  5. To oven-bake- place poppers on 2 large baking sheet that is lined with parchment paper. Bake for about 14 minutes. Once done, cool and enjoy!

  • 5-6 baby bella mushrooms- finely chopped

  • 1/2 cup dry oatmeal
  • 1 tsp salt

Notes:

Overcooking will result in a dry popper, oven method may seem like it needs more cooking but at around 14 minutes they should be done. You can get finely chopped veggies by using your food processor instead of hand chopping. Use freshly grated cheese, they melt well and overall have a better taste than packaged shredded cheese. Please double-check for accuracy in smart-points and calories if you are substituting any ingredients or using different measurements. Any questions feel free to ask!
