Lightened- Up Fettuccine Alfredo

This is the BEST Lightened-Up Fettuccine Alfredo recipe! You’d never know this recipe is lightened-up. It is creamy and delicious without packing on a heap of calories.

I call this Fettuccine Alfredo recipe a win-win because not one of my family members complained, even the picky ones!

This recipe makes about 8 heaping cups. The nutrition info provided is per 1 cup. If using different brands or measurements always double check for calories and smartpoints accuracy.

It’s best to serve right away as the sauce is nice, warm and creamy. The longer it sits, it starts to dry out. You can still serve it later on and add in the remainder 1/2 cup pasta water to help bring back in the creaminess. I’d just warm the water before adding.

Use freshly grated Parmesan, trust me, the taste is way better! Enjoy!

What do I need to make this Lightened-Up Fettuccine Alfredo?

  • Light cream (I used Great-Value brand)
  • Parmesan cheese- freshly grated NOT the ones from the bottle (I used Belgioioso brand)
  • Light butter (I use Land O Lakes)
  • Salt
  • Pepper
  • Red pepper flakes (optional)
  • Fettuccine pasta (use whole grain/whole wheat for those on WW purple plan)
  • Pasta water

The first step is to get your pasta boiling following package directions.

While water is heating, grate 1 cup Parmesan cheese and set aside.

Grate 1 cup Parmesan cheese

About 5 minutes before pasta is done, reserved 1 cup of pasta water and set aside.

While pasta is boiling you can start working on the Alfredo sauce. This comes together quickly so start about 3-5 minutes before pasta is ready.

Start by heating a large non-stick skillet on medium low heat.

Add butter to skillet
Pour cream
Once butter is completely melted and sauce starts to simmer, add freshly grated Parmesan cheese. Turn off heat and stir until cheese is melted.
Add salt and pepper. If desired add red pepper flakes.
Pour fettuccine pasta and 1/2 cup pasta water over sauce and stir to fully combine.
Serve immediately.

Lightened-Up Fettuccine Alfredo that is calorie and WW smartpoints friendly.

Ingredients
  • 2 tbsp light butter
  • 1 cup light cream
  • 1 cup freshly grated Parmesan cheese
  • 3/4 tsp salt + 2 tbsp for boiling pasta
  • 1/4 tsp black pepper, or more if desired
  • 1/4 tsp red pepper flakes (optional)
  • 1 lb fettuccine pasta, uncooked
  • 1 cup pasta water
Directions
  • Step 1 Cook pasta according to package directions. 5 minutes before pasta is done, reserve 1 cup pasta water and set aside.
  • Step 2 Grate 1 cup Parmesan cheese and set aside
  • Step 3 Heat a large non stick skillet over medium low heat, add butter
  • Step 4 As butter melts, add cream and stir
  • Step 5 When cream starts to simmer (bubbles at the sides) turn of heat and add Parmesan cheese. Stir until melted
  • Step 6 Season with salt, pepper and pepper flakes
  • Step 7 Pour drained pasta over sauce along with 1/2 cup pasta water, stir to fully combine.
  • Step 8 Serve Immediately.
  • Step 9 If serving later on, save remainder of pasta water to add right before serving.
  • Step 10 Enjoy!
