Here’s an easy Crust less Spinach and Cheddar Quiche. Its simple yet delish. Low in calories, points, fat and carbs. The serving size is a perfect portion to help stay within your calorie or weight watchers points budget. Enjoy!
Ingredients
- 5 large eggs
- 1 cup frozen spinach, thawed and squeezed to drain water
- 1/2 cup shredded cheddar, save about 2 tbsp to sprinkle on top
- 1 cup low fat milk
- 1 green onion, chopped
- 1/2 tsp salt
- dash of black pepper
- dash of nutmeg
- 1/2 tsp garlic powder
- red pepper flakes or hot sauce (optional)
Directions
Set oven on 350 degrees
- Mix eggs, milk, cheese, spinach, salt, pepper, nutmeg, garlic powder, whites of green onion saving green for garnish, red pepper flakes or hot sauce in a large bowl or measuring jug.
- Spray a 9 or 10 inch pie dish and pour mixture in.
- Bake for about 40 mins
- Once done, sprinkle remainder of cheese. Let it cool for about 10 minutes then garnish with green onion leaves
- Cut to make 8 equal servings
