Crustless Spinach and Cheddar Quiche

Here’s an easy Crust less Spinach and Cheddar Quiche. Its simple yet delish. Low in calories, points, fat and carbs. The serving size is a perfect portion to help stay within your calorie or weight watchers points budget. Enjoy!

Ingredients

  • 5 large eggs
  • 1 cup frozen spinach, thawed and squeezed to drain water
  • 1/2 cup shredded cheddar, save about 2 tbsp to sprinkle on top
  • 1 cup low fat milk
  • 1 green onion, chopped
  • 1/2 tsp salt
  • dash of black pepper
  • dash of nutmeg
  • 1/2 tsp garlic powder
  • red pepper flakes or hot sauce (optional)

Directions

Set oven on 350 degrees

  1. Mix eggs, milk, cheese, spinach, salt, pepper, nutmeg, garlic powder, whites of green onion saving green for garnish, red pepper flakes or hot sauce in a large bowl or measuring jug.
  2. Spray a 9 or 10 inch pie dish and pour mixture in.
  3. Bake for about 40 mins
  4. Once done, sprinkle remainder of cheese. Let it cool for about 10 minutes then garnish with green onion leaves
  5. Cut to make 8 equal servings
