This easy and delicious Chicken Salad with Blue Cheese, Apples, and Walnut recipe comes together quickly and is absolutely delicious! I was inspired to make this after having a similar one at a restaurant which I fell in love with. So simple yet amazingly good!
Notes:
Recipe calls for cooked chicken cutlets, I just seasoned mines with basic seasonings (salt, pepper, paprika, chili flakes, dried cilantro) and airfried it for a few minutes. You can also, grill, bake or pan fry just keep in mind any oil used will be added points/cals.
I cannot stress this enough, when measuring cheese, avocado, nuts etc use a food scale as you’ll get more bang for your buck. This is the food scale Ive been using for years EatSmart ESKS-01 Precision Pro Digital Kitchen Scale, Silver and it has never failed me.
Ingredients
- 1 5oz package fresh baby spinach
- 18 oz cooked chicken cutlets
- 70 g or a heaping 1/2 cup blue cheese crumbles
- 3/4 cup cherry tomatoes or more, sliced in half
- 1 apple, sliced or chopped to your preference
- 30 g or 1/4 cup Walnuts, Chopped
- 4 tbsp Ken’s Steak House Lite Raspberry Walnut Vinaigrette Dressing
Directions
- Add washed spinach to a Salad Bowl , chopped or sliced chicken cutlets, apples, tomatoes, blue cheese and walnuts
- Pour 4 tbsp Ken’s Steak House Lite Raspberry Walnut Vinaigrette Dressing over salad and toss. Serve right away.
