Taco Linguine

This Taco Linguine is a healthy and filling meal. I used whole grain linguine and lean ground turkey as healthier options. Black beans can be added as well as any other veggies. I kept it a bit simple for my picky eaters here. Comes together in about thirty minutes or less. This can be portioned out and kept in the refrigerator for the next few days as a meal prep. In addition, more or less spices can be added to suit your liking. Sometimes I like to add more paprika at the end for more color, totally optional. Enjoy!

Ingredients

  • 1 16oz package Healthy Harvest Whole Grain linguine
  • 1 cup pasta water
  • 1 lb 93% lean 7% fat ground turkey
  • 1 tbsp canola oil
  • 3 cloves garlic, finely chopped
  • 1 small onion, chopped
  • 1/2 cup chopped cilantro (more or less to your liking)
  • 2-3 plums tomatoes, chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika (regular is fine too)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup Mexican blend cheese

Directions

  1. Cook linguine according to package directions, saving about a cup of pasta water aside.
  2. Mix all spices and salt in a small bowl, set aside.
  3. In a large pan or Cast iron , heat 1 tbsp oil on medium high heat and add chopped onion. Cook for about a minute then add chopped garlic and stir.
  4. Add ground turkey and taco spice mix. Stir meat and spice mix together and cook for about 8-10 minutes or until fully cooked while breaking up ground meat into little pieces with a spoon.
  5. Add chopped tomatoes and half of cilantro. Cook for another minute or two then add linguine pasta
  6. Stir well to combine meat and pasta. Add about a half cup pasta water if pasta seems dry.
  7. Taste for salt and pepper and add more if desired. Sprinkle with Mexican cheese and cilantro.

Yield 9 servings (1 1/4 cups per serving)
