Banana Beet Bread

Healthy Banana Beet Bread recipe that is soft, moist, delicious and healthy!

USE OVER RIPE BANANAS

Use bananas that has lots of brown spots. More brown spots the better it is for this Banana Beet recipe as it packs tons of flavor. I have used bananas that have turned almost completely brown for banana breads. It releases natural sugar the more ripe it gets.

WHAT MAKES THIS BANANA BEET BREAD HEALTHIER?

  • Using a controlled amount of sugar that is low yet enough to keep this bread tasty. Less can be used if desired.
  • Adding beets which can lower blood pressure, boost energy, keep you regular and they are loaded with anti-oxidants to name a few of its benefits.
  • Using a mixture of whole wheat and white flour
  • No added fat

HOW TO MAKE BANANA BEET BREAD

Start by spraying a loaf pan with non stick spray and pre heating oven on 350 degrees. Combine flours, baking soda, salt, cinnamon and allspice in a large bowl, mix and set aside.
Mash Bananas with sugar and vanilla extract. Add egg and lightly mix. Set aside
Grate beet that is washed and peeled using a box grater
You can also use a food processor to chop finely.
Add beet to banana mixture
Mix to incorporate
Add banana and beet mixture to dry ingredients and fold in just until combined. Do not over mix.
Pour into prepared loaf pan
Sprinkle with chocolate chips. Bake for 35 minutes or until toothpick comes out clean.
Cool for 10 minutes before removing from pan and slicing.

Banana Beet bread that is healthy and easy to make!

Ingredients
  • 3/4 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon powder
  • 1/4 tsp or pinch ground allspice
  • 3-4 over ripe bananas
  • 1 medium beet
  • 1 egg- room temperature
  • 1 tsp pure vanilla extract
  • 1/3 cup granulated sugar
  • 15 g or 32 semi-sweet chocolate chips
Directions
  • Step 1 Spray a 9 inch by 5 inch loaf pan with non stick spray.
  • Step 2 Preheat oven on 350 degrees
  • Step 3 In a large bowl combine flours, baking soda, cinnamon, allspice and salt. Set aside
  • Step 4 In another bowl mashed bananas with sugar, vanilla extract. Add egg and mix lightly. Set aside.
  • Step 5 Using a box grater or food process, grate washed and peeled beet finely.
  • Step 6 Add beet to banana mixture to combine
  • Step 7 Mix in banana and beet mixture to dry ingredients. Fold in to incorporate, do not over mix.
  • Step 8 Pour into loaf pan and spread out evenly. Sprinkle with chocolate chips
  • Step 9 Bake for 35 minutes or until toothpick comes put clean.
  • Step 10 Cool for 10 minutes before slicing.
