Simple Roasted Sweet Potatoes

These roasted sweet potatoes are a staple for meal prep every week in the fall and winter! Pair them with your favorite protein and veggie for a complete healthy meal. Super easy to make and packed with flavor!

Variations

There are many variations to making roasted sweet potatoes. While this recipe is my go-to, you can certainly switch up ingredients.

  • Use any healthy oil such as olive or coconut oil
  • Herbs such as rosemary and parsley or even toss them when done with chopped cilantro
  • Plain- with just salt, pepper and, oil
  • Spices such as cumin, chili pepper, ginger, cinnamon, cloves, and nutmeg.
  • Bake at a higher temperature to achieve a crisp outer layer

Roasted Sweet Potatoes Recipe

Flavorful and healthy roasted sweet potatoes that can be used as a side dish for breakfast, lunch, and dinner.

Ingredients
  • 3 lbs sweet potatoes- preferably organic
  • 3 tbsp avocado, olive or coconut oil
  • 1 1/2 tsp kosher sea salt or Himalayan salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp dried dill or thyme (your preference)
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
Directions
  • Step 1 Heat oven to 350 degrees F
  • Step 2 Peel and cut potatoes into small cubes
  • Step 3 Place potatoes in a medium sheet pan and add oil, salt pepper, dill or thyme, paprika, and cayenne.
  • Step 4 Toss until fully coated. Bake for 1 hour tossing around every 15 minutes. Might be done early or later depending on the size of the cubes.
  • Step 5 Cool and enjoy.
