Great spring and summer Triple Berry Galette dessert that is refreshing, low-cal and low-point! I used store bought pie crust because its way easier and frozen fruit. You can certainly use fresh fruit as well! Its so simple to put together and perfectly portioned allowing you to stay within your calorie and points goal. I do want to say that the filling is low in sugar, taste it before you add it to the crust. If you’re not counting calories or points feel free to add more but i think its just right with the sauce addition and helps me stay on track! Enjoy!
Ingredients
- 1 9 inch pie crust
- 2 cups unsweetened Triple Berry frozen fruit
- 2 tbsp sugar
- 1 tsp corn starch
- pinch of salt
- dash of nutmeg
- dash of cinnamon
- zest of a lemon
- 3/4 tsp lemon juice
- 1 tbsp water
- 1 egg + 1 tbsp water for egg wash
- 1/2 tsp of coarse brown sugar (I used Sugar In The Raw)
- 3 tbsp confectioners sugar (for glaze)
- 1 tbsp confectioners sugar for dusting (optional)
- 1 small scoop of Halo Top vanilla ice cream or your favorite ice cream (optional)
Directions
- Set oven to 350 degrees and line a large cookie sheet or baking dish with parchment paper
- Add the frozen berries to a medium saucepan on medium high heat
- Add 2 tbsp sugar, cornstarch, lemon zest and juice, nutmeg, cinnamon, salt and 1 tbsp water, stir
- Cook until the fruit is soft and mixture is well combined, about 5-8 minutes.
5. Roll out pie crust onto parchment lined cookie sheet and fill with fruit filling, leaving some of the fruit sauce in the pan.
6. Start folding in one piece of pie crust at a time then second overlapping each fold pressing the seam a bit to stay, go around until all ends are folded in
7. Brush crust with egg wash mixture (1 egg + 1 tbsp water, mixed) and sprinkle brown sugar crystals around pie crust
8. Bake for 30 minutes or until golden brown.
9. While galette is baking, add 3 tbsp confectioners sugar and 1 tbsp water to remainder fruit sauce and whisk. Pour into dish to later drizzle over galette or save to drizzle over pancakes/waffles.
10. Once done baking, let cool for 10-15 minutes. Slice in eighths. Serve plain, with sauce drizzled over (included in nutrition info and myWW calculations), top with ice cream or whipped cream (not included in nutrition info and myww calculations) or dust with confectioners sugar.
