These Loaded Zucchini Bites are scrumptious! I mean, ANYTHING with bacon is scrumptious right? Split into 4 servings, these are only 2 WW smartpoints and 69 calories per serving. I could eat the whole plate..which you definitely can if you choose too as it’ll only be 8 smartpoints and 276 calories. Be sure to not cook your zucchini too long, just until it has charred brown spots. Enjoy!
Ingredients
- 2 small zucchini, sliced
- Pam spray
- 1/4 cup or 28 g shredded fiesta cheese
- 1 tbsp Parmesan cheese
- 2 tbsp light sour cream
- 1/2 tsp water
- salt
- pepper
- dash of paprika
- 3 slices center cut bacon
Directions
- Heat a large cast iron pan or non stick frying pan on medium high heat and cook bacon till crispy, drain on a paper towel
- Drain grease and wipe pan. Spray with Pam spray.
- Place zucchini slices in pan and sprinkle with salt, black pepper and dash of paprika.
- Pan fry until zucchini gets charred or brown spots for about 2-3. minutes, flip and season with a little more salt, pepper, and paprika.
- Once both sides are charred, remove and add to a serving dish. Sprinkle fiesta and Parmesan cheese right away.
- Mix sour cream with a tiny bit of water, about 1/2 tsp and drizzle over cheesy zucchini.
- Finely chop bacon and sprinkle.
- Garnish with chopped green onions.
