This Easy Italian Sausage and Pineapple Fried Rice is easy to make and delicious! The succulent pineapple balances out the highly flavored sausage. Throw in some veggies and rice and you have a heavenly bowl of fried rice. My daughter had thirds!
Use quinoa to make this low carb. You can also use brown rice instead of jasmine rice. Jasmine rice is our preference.

Ingredients
- 3 cups cooked jasmine rice, chilled (a day old is better)
- 2 sweet Italian sausage links, removed from casing
- 1 cup cubed carrots (about 3 medium)
- 1 cup frozen peas
- 1 cup pineapple (fresh or canned in natural juice)
- 3 scallions, chopped and divided
- 3 cloves garlic, finely chopped
- 1 small onion chopped
- 1 tbsp low sodium mushroom flavor soy sauce (plain is fine too)
- 1 tsp sesame oil
- dash of salt
- dash of black pepper
Directions
- Heat non stick skillet on medium low and crumble sausage in small pieces into skillet. No oil is needed.
2. Cook sausage until it starts to brown, add onion and garlic, and 3/4 of scallions. Stir for a minute, then add carrots and cook for 2-3 minutes. Add frozen peas and pineapple. Cook for 3-5 minutes while stirring every minute or so. The edges of pineapple will start to get a golden brown.
3. Add chilled rice and 1 tbsp soy sauce
3. Stir rice, sausage and veggies together. Let the rice “fry” for a minute without stirring on medium high heat, then stir. Turn off heat and add sesame oil and remaining chopped scallions. Taste for salt and pepper and add to your desire.
Yield: 6 cups (1 cup per serving)
