This Mushroom, Tomato, and Feta Quiche is easy to put together, filling and healthy. All ingredients are mixed in one bowl then poured over pie crust. You can switch the feta for Parmesan cheese, you can even go crust less if you wish. Makes 6 slices, 221 calories per slice, 5 smartpoints on all 3 WW plans. Enjoy!
Ingredients
- 1 store bought pie crust, thawed
- 5 medium-large eggs
- 2 cups baby bella mushrooms, chopped
- 1/2 cup sliced cherry tomatoes
- 28 grams or 1/4 cup feta cheese
- 1 scallion
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 scallion, chopped
Directions
- Heat oven on 375
- Fit pie crust into a pie dish and use a fork to poke the bottom
- In a large bowl, crack eggs. Add salt, pepper, scallions, milk, onion powder, garlic powder and mix
- Add chopped mushroom, tomatoes and feta cheese , stir to combine
- Add egg mixture on pie crust and bake for about 30 minutes or until egg is set and center is jiggly.
- Once done, cool for 10 minutes. top with extra feta cheese and scallions if desired.
