What do I need to make this Holiday Cheese Log?
Neufchatel Cheese. Neufchatel Cheese can be used interchangeably with Cream Cheese. Neufchatel Cheese has less fat than regular cream cheese which makes it perfect for this cheese log recipe.
Dried Cranberries. They add flavor with some tang and sweetness.
Pecans. Pecans adds crunch along with a sweet nutty flavor.
Shredded Cheddar Cheese.
Scallion which gives this log a spicy-like flavor.

Recipe Adjustments
This Holiday Cheese Log recipe is made point and calorie friendly. If you’re not counting this can be made using regular cream cheese and any amount of pecan, cranberries and cheddar cheese you desire. Some other yummy additions are crumbled bacon, walnuts, almonds, herbs, ranch etc.
Notes:
- Log needs to be chilled for 15 minutes before rolling in topping
- You can finely chop the pecans, cheddar cheese and cranberries instead of using a food processor.
- Be sure to spray plastic wrap with non stick spray before placing cream cheese mixture to be rolled into a log. Comes off easily that way.

Ingredients
- 8oz Neufchatel Cheese-room temperature
- 2 tbsp. shredded cheddar cheese
- 2 tbsp. dried cranberries
- 2 tbsp. chopped pecans
- 1 scallion- finely chopped
- pinch of salt
- pinch of black pepper or couple grinds
Directions
- Step 1 Start by pulsing pecans, cranberries and cheddar cheese in a food processor until fine. Set aside
- Step 2 Place cream cheese in a bowl and mix with a hand mixer for about 30-40 seconds.
- Step 3 Add 1 tbsp. of the pecan, cranberry and cheddar cheese mixture half of the scallion, salt and pepper. Mix together.
- Step 4 Spray a piece of plastic wrap (enough to hold cheese log) with non stick spray.
- Step 5 Add cream cheese mixture, wrap with plastic wrap and form into a log, twisting ends to secure.
- Step 6 Chill in the freezer for about 15 minutes.
- Step 7 Place remainder of topping mixture and scallion on a plate spreading them out.
- Step 8 Roll cheese log on topping, pressing it gently to the log until its fully covered.
- Step 9 Serve right away with your favorite crackers or store in plastic wrap for up to 2 weeks.
