These Easy Oven Baked Potatoes makes a great side dish. Naturally creamy, with just a hint of seasonings. They are low in carbs, calories and WW smartpoints. This recipe is family approved which means even the pickiest eater loves it and I’m sure you will too!
Serve these as a side dish for Thanksgiving, week-night dinners, or even for breakfast! We have had these with chicken, turkey sausages, meatloaves..it really goes with anything!
You can also roast these by not covering them with foil, just be sure to turn them a couple times during cooking. I used fresh dill in this potato recipe but you can also use dried dill. In addition, you may use regular potatoes and cut them into chunk size instead of these mini yellow potatoes. Cooking time may vary as well as nutrition info, always double check if counting!

What do I need to make this Easy Oven Baked Potato recipe?
- 1 2 lb bag of Mini yellow potatoes (I used Green Giant brand)
- 1 tbsp Olive Oil
- 1 tbsp fresh dill, chopped
- 1 tsp Salt
- 1/2 tsp Black Pepper
- Sheet pan
- Aluminum Foil
I used a large baking dish to bake these potatoes like the one below, but you can also use a large sheet pan.
- Start by preheating your oven on 350 degrees. Wash and dry potatoes.
2. Cut potatoes into 4ths and 6ths for the bigger ones. Try to cut them evenly so they cook evenly.
3. Season potatoes with olive oil, chopped dill, salt and pepper and toss.
4. Bake for 40 minutes covered with foil then uncover, toss, and cook for an additional 10 minutes. Enjoy!

Ingredients
- 1 2lb bag mini yellow potatoes
- 1 tbsp olive oil
- 1 tbsp chopped fresh dill
- 1 tsp salt
- 1/2 tsp black pepper, ground
Directions
- Step 1 Preheat oven on 350 degrees
- Step 2 Wash and dry potatoes. Cut potatoes into 4ths and 6ths for the bigger ones.
- Step 3 Place potatoes on a large baking dish or sheet pan and season with olive oil, dill, salt and pepper. Toss to coat evenly.
- Step 4 Cover with foil , make a slit to let steam out and bake for 40 minutes. Remove foil, toss potatoes and bake for an additional 10 minutes.
