These Chicken Caprese Bites are simply delectable. They make a great holiday appetizer or snack and comes together in a matter of minutes!
What is Caprese?
Caprese is a salad which contains fresh mozzarella, tomatoes , basil, olive oil and salt. In this Chicken Caprese Bites recipe, I added some other delicious flavors and ingredients to make this into an amazing appetizer.
Notes:
I suggest filling the shells/cups right before serving to avoid sogginess. The filling can be made in advance and store in the refrigerator until ready to fill and serve. This can be made without the chicken if desired. Just be sure to double check if ingredients are being left out or added for accurate smart points and nutrition info. You can find Athens phyllo shells in the freezer section in your grocery store next to the frozen fruit/cakes/dough.

Ingredients:
- 1 package Athens Phyllo Shells
- 30 Fresh mozzarella pearls or 2.55 oz (I use the “little ones” by BelGioioso)
- 3-4 oz raw chicken breast or tenders- cut into tiny pieces
- 8 cherry tomatoes- cut into 4 pieces per tomato
- 1.5 tbsp balsamic glaze (I used Delallo brand)
- 2-3 large basil leaves- rolled and sliced
- 1/2 tsp olive oil
- 1/4 tsp italian seasoning
- 1/4 tsp garlic powder
- 1/4 tsp salt or more to taste
- 1/8 tsp black pepper or more to taste

Chicken Caprese Bites
Chicken Caprese Bites that are great for the holidays or any day. Makes a great appetizer and is smart point and calorie friendly!
Ingredients
- 1 package Athens Phyllo Shells
- 30 fresh mozzarella pearls (little ones)
- 3-4 oz raw chicken breast or tenders, chopped into tiny pieces
- 8 cherry tomatoes- cut into 4 pieces per tomato
- 1.5 tbsp balsamic glaze
- 1/2 tsp olive oil
- 2-3 large basil leaves- rolled and sliced
- 1/4 tsp italian seasoning
- 1/4 tsp garlic powder
- 1/4 tsp salt or more to taste
- 1/8 tsp black pepper or more to taste
Directions
- Step 1 Heat a small pan on medium high heat. Add olive oil.
- Step 2 Add chopped chicken, italian seasoning, garlic powder, pinch of salt and pepper.
- Step 3 Stir and cook for about 4 minutes. Set aside once done to cool.
- Step 4 In a small bowl add chopped tomatoes, mozzarella pearls, pinch of salt and pepper
- Step 5 Once chicken is cooled, add to tomatoes and mozzarella.
- Step 6 Sprinkle in half of sliced basil leaves. Stir and taste of salt and pepper. Add more if desired.
- Step 7 Fill shells with caprese filling.
- Step 8 Drizzle with balsamic glaze and top with remainder of sliced basil leaves. Serve right away.
