These high protein Chicken Roll ups that are stuffed with ricotta and spinach are divine. Perfectly seasoned filling and to top it off, yummy bacon! You can use turkey bacon as well. Perfectly portioned to fit your calorie and smartpoints budget!
Ingredients
- 6 slices chicken breast 5-6 oz each, pound out thin enough to roll up
- 28 g or 1/4 cup part skim mozzarella, shredded
- 1 cup part-skim ricotta cheese
- 1 tbsp shredded Parmesan cheese
- 1 cup frozen spinach, thawed and squeezed to drain water
- 6 center cut bacon slices, cut in half
- 1 tsp Italian seasoning
- 1/4 tsp dried basil
- 1/2 – 1 tsp salt
- 1/4 tsp black pepper
- 1 tsp garlic powder
- Red pepper flakes (optional)
- Pam spray
Directions
- Heat oven to 375 degrees
- Season chicken slices with 1/2 teaspoon salt and black pepper pressing seasoning into chicken
- In a bowl add, ricotta cheese, spinach, mozzarella, Parmesan cheese, Italian seasoning, basil, garlic powder, 1/2 tsp salt, mix well
- Lay out one chicken slice and add about 1 tbsp + 2 tsp of ricotta mixture on top and spread evenly as you can
5. Start from one end and roll up
6. Once rolled up, cut bacon slices in half and lay both pieces over chicken, repeat with the rest of chicken slices
7. Transfer to a baking sheet sprayed with Pam spray and bake for 15 minutes, then broil on high for about 5-10 minutes. Once done, let rest for 10 minutes. Enjoy!
