Breakfast Poppers with Italian Turkey Sausage, Cheese, and Peppers

These Breakfast Poppers with Turkey, Cheese and Peppers, makes a quick grab and go breakfast or snack. They also freeze well and can be reheated in the microwave, air fryer or oven. Pretty simple recipe!

To make these I used sweet italian turkey sausage links (Shady Brook brand) comes 6 in a pack, veggies, cheese and eggs. You can use any veggies you want. In this Breakfast Poppers with Turkey, Cheese and Peppers recipe I use red bell pepper as my veggie but mushrooms, broccoli, cauliflower etc are all good options.

Can I make these in the Air Fryer?

Of Course you can! These poppers can be made in the Air Fryer on 350 degrees Fahrenheit for about 8-10 minutes or until internal temperature reaches 165 degrees. This is my favorite way to make them. They can also be made in the oven which requires a bit longer baking time, about 20 minutes on 375 degrees Fahrenheit or until internal temperature reaches 165 degrees.

How can I Make these even lower in smart-points?

These are 4 smart points on green plan per 3 poppers and 3 smart points on blue and purple plans per 3 poppers. If you would like to lower the smart-points I suggest adding more veggies to make them bulkier. You can also add zero point foods such as cooked quinoa on purple plan. Ingredients

  • 1 package or 6 links sweet italian turkey sausage (I used Shady Brook brand)
  • 4 eggs
  • 1/4 cup shredded cheese (I used a mexican blend)
  • 1/3 cup chopped shallots
  • 1/2 cup chopped red bell pepper
  • 1 green onion, finely chopped
  • 1/4 tsp black pepper
  • 1/8 tsp salt
  • Non stick spray

Method

Start by gently scrambling 4 eggs using non-stick spray on a medium frying pan – set aside. Set oven on 375 degrees or pre-heat air fryer on 350 degrees.
Remove casing from sausage links
Add scrambled eggs, cheese, shallots, bell peppers, green onion, salt and black pepper
Mix well to combine
Use a small cookie scoop or measure 1 tbsp and half to form meat into balls. You can also weigh 1 oz on a food scale for accurate measuring. Roll them and place on a large cookie sheet lined with parchment paper. Bake for about 20 minutes or until internal temperature reaches 165. You can let them broil if you want to add more color to them.

Ingredients
  • 1 package or 6 links sweet italian turkey sausage
  • 4 eggs
  • 1/4 cup shredded cheese
  • 1/3 cup chopped shallots
  • 1/2 cup chopped red bell pepper
  • 1 green onion, finely chopped
  • 1/4 tsp black pepper
  • 1/8 tsp salt
  • non-stick spray
Directions
  • Step 1 Scramble eggs gently using non stick spray. Set aside
  • Step 2 Preheat oven on 375 degrees
  • Step 3 Remove casing from sausage
  • Step 4 Add scrambled eggs, chopped shallots, chopped bell peppers, green onion, cheese, salt and black pepper
  • Step 5 Mix well to combine
  • Step 6 Form into 1 oz balls using a small cookie scoop or measure 1.5 tbsp. You can also use a food scale and weigh 1 oz per ball.
  • Step 7 Bake for 20 minutes or until internal temp reaches 165 degrees. Broil for 5 minutes if you want some color to it.
  • Step 8 Enjoy!
