This super easy Loaded Air Fryer Chicken is delish! It really takes the bore out of chicken breast with the gooey cheese, creamy sour cream and crunchy salty center cut bacon. This serves 2 and along with being smartpoints friendly, it is also low-carb/ high protein. Prep and cook within 30 minutes or less.
Notes:
Weigh chicken breast before cooking. An 8-10 oz raw chicken breast will be 7 smartpoints on green per serving (half of loaded chicken breast). I use regular shredded cheddar cheese, reduced fat can be used too.

Ingredients
- 1 chicken breast 8-10 oz
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried cilantro or parsley (optional)
- 2 tbsp light sour cream
- 28 g or 1/4 cup shredded cheddar cheese
- 1 green onion, chopped
- 2 slices center cut bacon
- Pam spray
- Foil
Directions
- Step 1 Pre heat air fryer for 2 minutes on 375 degrees. Once done pre heating, cook bacon for about 5-6 minutes. Drain the oil from air fryer once bacon is done cooking. Chop bacon into small pieces, set aside.
- Step 2 Place chicken on a piece of foil sprayed with Pam spray and season chicken with salt, pepper, garlic powder, cilantro or parsley. Make a slit in the middle without cutting through.
- Step 3 Preheat air fryer on 350 degrees for 2 minutes
- Step 4 Fold foil ends as if you’re making a “boat” for the chicken. This will help keep everything in there just in case it oozes out.
- Step 5 Place in air fryer and cook for about 10 minutes, stopping to add sour cream and cheese to the middle. Cook for another 2 minutes or until a meat thermometer reads 165 degrees.
- Step 6 Once done, top with chopped bacon and chopped green onions.
