These healthier Easy Swedish Meatballs are delicious and low in points and calories. They are air fried for a few minutes then drenched in a quick sauce that comes together by adding canned cream of mushroom, chicken broth and seasonings. These can be made in the oven as well and stove top, just be sure to count any oil used. Enjoy!

Ingredients
- 1 lb ground beef 93% lean
- 1 egg
- 1/4 plain oats
- 1 small onion, chopped finely
- 2 tbsp chopped parsley, divided (can use dried as well)
- 1/2 tsp salt
- 1.2 tsp black pepper
- 1 tsp garlic powder
- 3/4 tsp nut meg, divided
- 1 10.5 oz can Healthy Harvest Cream of Mushroom
- 1 cup low sodium chicken broth
- 1 splash Worcestershire sauce
- Pam spray
Directions
- In a large bowl, add ground beef, chopped onion, garlic powder, egg, salt, pepper, 1/2 tsp nutmeg, 1 tbsp chopped parsley, oats and combine
2. Using a small cookie scoop, scoop meat and form into a meat ball. Each meat ball should be around 1 oz. You can also use a tbsp and measure 2 tbsp per meat ball. You should get 18 meat balls.
3. Heat air fryer on 350 degrees for 2 minutes. Once done heating, spray with Pam spray and add about 8 meatballs at a time, more if your air fryer can hold more without touching. Cook for 6-7 minutes on 350 degrees, turning half way. Double check with a meat thermometer to make sure its cooked at a safe temperature of 160 degrees internally. Once done cover with foil on a plate and finish the rest of meat balls. You can also cook these in the oven and stove top but be sure to count any oil added for stove top cooking.
4. Heat a large sauce pan on medium low, add can of Healthy Harvest Cream of Mushroom, chicken broth, remainder of nutmeg and splash of Worcestershire sauce. Stir until all ingredients are mixed in well
5. Add meat balls into sauce and gently stir. Use a spoon to pour sauce over meat balls, turn off heat and sprinkle remainder of parsley.
These make great meal preps with whole wheat noodles, rice, or quinoa with a side of veggies.
Yield: 6 servings (3 Swedish meatballs per serving with about 2 tbsp sauce)
